Broiled Creole Trout Fillets

Serves 4

A tasty seafood recipe that’s bursting with flavor.

Ingredients:

For Trout Fillets:
4 trout fillets, (6 to 8 oz. each), skin on
1 tablespoon finely chopped fresh parsley
2 teaspoons finely chopped fresh oregano
Salt, to taste
1/4 cup olive oil
1 tablespoon fresh lemon juice
1 tablespoon finely chopped chives
1 tablespoon minced garlic
Fresh ground pepper, to taste
Lemon wedges, for garnish
1 tablespoon Creole seasoning, see recipe
For Creole Seasoning:
1 tablespoon onion powder
1 tablespoon dried oregano
2 1/2 tablespoons paprika
1 tablespoon black pepper
1 tablespoon dried thyme
1 tablespoon cayenne pepper
2 tablespoons garlic powder
2 tablespoons salt

Directions:

  1. For Creole Seasoning:
  2. Combine all ingredients in a mixing bowl. Mix well. Set aside.
  3. For Trout Fillets:
  4. Preheat broiler. Grease a shallow baking dish with cooking spray.
  5. Combine parsley, oregano, lemon juice, chives, garlic and Creole seasoning in a mixing bowl. Stir together very well. After mixed, slowly add olive oil and stir. Season with salt and pepper to taste.
  6. Arrange trout fillets, skin side down, in baking dish. Brush trout with seasoning mix.
  7. Place in oven about 5 inches from heat source. Broil for 5 minutes. Serve with lemon wedges and enjoy.
