Easy Chicken Tortilla Soup

Hearty and oh so delicious!
|4 cups chicken stock
|1 can diced tomatoes with juice
|2 tablespoons lime juice
|1 can green chiles, un-drained
|2 tablespoons cilantro leaves, chopped
|1 carrot, diced
|2 green onions, chopped, green parts only
|3/4 cup corn kernels
|1 cup chopped cooked chicken
|1/2 cup shredded Monterey Jack cheese
|Tortilla chips, for serving
- In a large stockpot, simmer chicken stock with tomatoes, lime juice, green chiles, cilantro, carrot, green onions and corn for 45 minutes.
- Add cooked chicken about 5 minutes before done.
- Serve soup in bowls topped with shredded cheese and crushed tortilla chips.
