Ham and Potato Soup

Serves 8

A classic that never disappoints.

Ingredients:

5 lb. russet potatoes, peeled and diced
2 cups ham, diced small
1/2 stick butter
1 cup half and half
1/2 cup sour cream
Sea salt, to taste
Ground black pepper, to taste

Directions:

  1. Place potatoes in a large pot; add just enough water to cover. Place lid on pot and bring to a boil.
  2. Once boiling, uncover and reduce heat to medium-high. Cook potatoes for 15-20 minutes. 
  3. Reduce heat to low. Add ham and butter. Season with salt and pepper. Add sour cream and half and half. Keep soup warm until ready to serve.
