Mock Tuna Salad

Ingredients:

1 5 oz. can garbanzo beans, drained
3 stalks celery, diced finely
1/4 red onion, diced finely
1/3 red bell pepper, diced finely
1/4 bunch parsley, chopped
1/4 bunch dill, chopped
1 tablespoon sesame tahini
1 clove garlic, minced
Juice of one lemon
2 teaspoons Lemon Pepper Seasoning
3 tablespoons vegan mayonnaise
Freshly ground Himalayan salt to taste

Directions:

  1. Mash the garbanzo beans in a medium mixing bowl, add the chopped veggies and stir to combine.
  2. Combine the tahini, garlic, lemon juice, vegan mayo, and lemon pepper in a liquid measuring cup. Mix well and pour over the mashed garbanzo beans. Stir to combine, season with freshly ground Himalayan salt to taste then serve as a sandwich, canapes, or stuffed into a tomato. For best results chill two to three hours to develop the flavor.
