Avocado Cucumber Tomato Salad

Serves 2

Healthy, delicious and super simple to prepare.

Ingredients:

2 avocados
1 English cucumbers
2 tablespoons lemon juice
1 teaspoon sea salt
1 lb Roma tomatoes
1/4 cup chopped cilantro
1/8 teaspoon black pepper
2 tablespoons extra-virgin olive oil
1/2 red onion, sliced

Directions:

  1. Toss together avocado, cucumbers, tomatoes, cilantro and red onions in a salad bowl.
  2. Drizzle lemon juice and olive oil over veggie mixture. Toss to combine. Season with sea salt and pepper.
Course: Salad
