Roasted Salmon With Lemon Thyme Crust

Serves 8

This roasted salmon dish is sure to become a new favorite.

Ingredients:

1/2 cup chopped fresh parsley
1/4 cup grated parmesan cheese
1/4 cup chopped fresh thyme
4 lb salmon fillets
2 teaspoons grated lemon peel
1/2 teaspoon salt
3 cloves garlic
2 cups bread crumbs
4 tablespoons unsalted butter, melted

Directions:

  1. Preheat oven to 350° F.
  2. Place parsley, parmesan cheese, thyme, garlic, lemon peel and salt into a food processor. Process mixture until fine. Transfer to a bowl.
  3. Add bread crumbs and 3 tablespoons melted butter to bowl and mix well.
  4. Grease a shallow baking dish and place salmon into the dish.
  5. Brush the salmon with remaining melted butter, and cover with the bread crumb mixture.
  6. Roast the fish for about 25 minutes.
Course: Dinner
