Pumpkin Butter

Serves 12
Great as a dip, spread and dessert topping.
Ingredients:
1 can pumpkin puree, 15 oz. |
3/4 cup light brown sugar |
2/3 cup unfiltered apple juice |
1/4 cup pure maple syrup |
1 tablespoon ground cinnamon |
2 teaspoons ground ginger |
1/4 teaspoon salt |
1/4 teaspoon ground cloves |
1/4 teaspoon ground nutmeg |
2 tablespoons unsalted butter |
Directions:
- Add the pumpkin puree, brown sugar, apple juice, maple syrup, ground cinnamon, ground ginger, salt, ground cloves, and ground nutmeg in a pot. Stir together.
- Set the stovetop to medium heat. Cook and stir for 30-40 minutes, until mixture thickens.
- Remove from the heat. Add the butter and stir to combine.
- Transfer to a bowl to serve immediately or jar to refrigerate.
