Pumpkin Butter

Serves 12

Great as a dip, spread and dessert topping.

Ingredients:

1 can pumpkin puree, 15 oz.
3/4 cup light brown sugar
2/3 cup unfiltered apple juice
1/4 cup pure maple syrup
1 tablespoon ground cinnamon
2 teaspoons ground ginger
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter

Directions:

  1. Add the pumpkin puree, brown sugar, apple juice, maple syrup, ground cinnamon, ground ginger, salt, ground cloves, and ground nutmeg in a pot. Stir together.
  2. Set the stovetop to medium heat. Cook and stir for 30-40 minutes, until mixture thickens.
  3. Remove from the heat. Add the butter and stir to combine.
  4. Transfer to a bowl to serve immediately or jar to refrigerate.
