Balsamic Raspberry Glazed Pork Chops

Ingredients:
2 tablespoons olive oil
4 bone-in pork chops
Salt, to taste
Black pepper, to taste
1/2 cup raspberry preserves
2 tablespoons balsamic vinegar
1 teaspoon minced garlic
1/2 teaspoon thyme
Directions:
Pour the olive oil into a large skillet and bring to medium-high heat.
Season both sides of the pork chops with salt and pepper.
Place the pork chops into the skillet to cook for 4-5 minutes per side. Transfer the pork chops from the skillet to a plate.
Stir together the raspberry preserves, balsamic vinegar, minced garlic, and thyme in a mixing bowl.
Reduce the heat to medium and pour the raspberry mixture into the same skillet. Let simmer for 3 minutes, stirring frequently. Return the pork chops to skillet and cook for an additional minute per side, spooning glaze over top while they are cooking.
Transfer the pork chops to serving plates. Spoon any extra raspberry glaze on top. Enjoy!
