Whipped Feta Dip with Roasted Balsamic Strawberries

Ingredients:
1/2 cup plain Greek yogurt
8 oz feta cheese
2 tablespoons olive oil
Black pepper, to taste
2 lb strawberries
2 tablespoons balsamic vinegar
2 teaspoons honey
Toasted bread, for serving
Directions:
Combine the Greek yogurt, feta cheese, olive oil, and black pepper in a food processor. Pulse until smooth. Place into the refrigerator to chill for 45 minutes.
Preheat oven to 350° F. Line a large baking sheet with parchment paper.
Hull the strawberries, then cut into thick slices. Place the strawberries in a large bowl. Whisk together the balsamic vinegar and honey in a mixing bowl. Drizzle the balsamic-honey mixture over the strawberries and toss to coat.
Pour the bowl of strawberries on the baking sheet and space them out. Place into the oven to roast for 35 minutes.
Remove from the oven and let cool for 10 minutes.
Transfer the whipped feta to one side of a large bowl. Put the roasted strawberries on the other side of the bowl. Spoon the whipped feta and strawberries across toasted bread. Enjoy!
