Citrus Dijon Marinated Chicken

Serves 4

Tart, sweet and herbaceous.

Ingredients:

4 boneless skinless chicken breasts
8 tablespoons orange juice
3 tablespoons lemon juice
2 tablespoons lime juice
2 tablespoons Dijon mustard
1/2 cup olive oil
1 teaspoon Herbs de Provence
1 teaspoon finely chopped fresh oregano
1 teaspoon finely chopped fresh thyme
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon crushed red pepper flakes

Directions:

  1. Whisk together the orange juice, lemon juice, lime juice, Dijon mustard, olive oil, Herbs de Provence, oregano, thyme, garlic powder, salt, and crushed red pepper flakes in a mixing bowl. Set aside 1/4 cup of the marinade. Keep in the refrigerator until ready to use.
  2. Place the chicken breasts in the marinade. Coat evenly. Cover and place in the refrigerator to chill for at least 1 hour.
  3. When ready to cook, bring a large pan to medium heat. Once hot, place the chicken breasts in the pan. Brush half of the reserved marinade over the chicken and cook for 5-7 minutes, until lightly brown. Flip and brush the chicken breasts with the remaining marinade. Cook for 5-7 minutes.
  4. Transfer the chicken breasts to serving plates. Enjoy!
