Crispy Toast with Ricotta and Honey Roasted Cherries

Perfect for breakfast or brunch.

Ingredients:

1 Italian baguette, sliced into 12 pieces
24 fresh cherries
2 tablespoons honey, plus more for drizzling
1 1/2 cups whole milk ricotta cheese
Balsamic vinegar, for drizzling
Sea salt, for sprinkling

Directions:

  1. Preheat oven to 450° F. Line a large baking sheet with aluminum foil and grease the foil with cooking spray.
  2. Remove the stems from the cherries. Place the cherries into a bowl and drizzle the honey over top. Toss to coat. Spread the cherries across the pan. Place the baking sheet into the oven and roast for about 15 minutes, until the cherry skins begin to wrinkle.
  3. Arrange the baguette slices on a second baking sheet.
  4. Remove the cherries from the oven. Place the baguette pan in the oven and toast for 4 minutes per side, until golden. Remove from oven and set aside.
  5. Beat the ricotta in a large mixing bowl, until creamy.
  6. Remove all the cherry pits and slice the cherries in half.
  7. Spread 2 tablespoons of ricotta on each baguette slice. Place 4 cherry halves on each baguette. Drizzle a little honey over the cherries followed by a drizzle of balsamic and a pinch of sea salt. Enjoy!
